Freezing Fish

!±8± Freezing Fish

Whole fish should be gutted and cleaned thoroughly. Some authorities recommend freezing whole fish with the scales on for a better flavor. Fillets may be dipped into beaten egg and coated with breadcrumbs if desired, (the frozen fillets of fish are then ready to be cooked later without thawing). Lay individual fish fillets and steaks and whole cleaned fish onto a smooth tray and freeze for approximately 2 hours. Once frozen, remove from tray and pack in a good quality plastic or polythene bag. Remove the air from bag before sealing, as this will help to prevent the fish from drying out and excess ice forming inside the packet. Do not thaw always cook fish from the frozen state.

Cod, tuna, New Zealand groper and Australian mullet are fatty or oily fish. Dip this type of fish into lemon juice and water before freezing. Use 1 large lemon to 1 pint of cold water or 1¼ teaspoons of ascorbic acid powder to 2 pints of cold water. Dipping oily fish before freezing helps to retain the natural flavor.

Shell fish, cooked or uncooked, should only be frozen if completely fresh. When you are opening shell fish, prevent the grit from falling into contents by washing the shells thoroughly in cold water before opening. To freeze individual oysters, mussels etc., simply force the shells open, letting the liquid and fish fall into ice cube trays or similar divided containers. Add a few drops of lemon juice to each fish to help seal the color. Once frozen, tip cubes into a strong plastic bag, remove the air and seal well. Shell fish will keep in good condition for up to 6 months. Thaw in a refrigerator and serve chilled raw or cook in the usual way.

Crayfish (and lobster) for special dishes it is desirable to keep the tails whole. Remove cold cooked tails from shells. Dip each tail into a brine solution (2 oz salt to 2 pints water). Spread out each wet tail separately onto a smooth tray. Freeze for 1 hour, then dip in solution again and freeze again. Repeat dipping and freezing process after 20 minutes. Wrap each frozen tail separately in waxed paper. Package as much as you like into a large plastic bag. Remove the air and seal well. If tails are to be re-cooked later, do not thaw, cook from the frozen state, allowing approximately 15-20 minutes extra cooking time. Tails prepared and packaged like this can be kept for up to 3 months. If kept longer they will toughen and dry out.

Such an unfortunate but catchy name, bath bombs or bath fizzies make a great homemade gift idea because they are one of those luxurious indulgences that people often do not buy for themselves, but love to receive as a gift. They will certainly appreciate them when they realize that they are homemade gifts. You have probably seen them at bath boutiques, but basically bath bombs are balls of baking soda and citric acid that when dropped in water dissolve, effervesce, and releases the scents or other ingredients you put in them. Its kind of like bathing in bathtub full of seltzer water. It can be a soothing and therapeutic experience.

There are a couple of ways to make them. Here is the method based off a tutorial from teachsoap.com:

Ingredients:

Citric Acid... A powder that you can find here at brambleberry.com. You also might be able to find it at a local winemaking/brewing shop.

Baking Soda... Should be easy enough to find, check in your cupboard or refrigerator.

Witch Hazel... You can find this at here at brambleberry.com, otherwise you might find it at your local health food store or pharmacy.

Fragrance or Essential Oil... You can find this at, yep, you guessed it, brambleberry.com, or your local heath food store..

Clear Spherical Molds... There is quite a selection at soapequipment.com. They have molds and bath bomb kits at brambleberry.com but no plain spherical ones. I have also heard of people using ice cube trays.

You can tint them with food coloring, but I think they look fine as is. It's a matter of preference. If you do use food coloring make sure you only use a few drops per batch, otherwise it might stain someone's tub.

The process:

It is a bit tricky at first. You might have a bad batch or two in the beginning, or a have few bath bombs that fall apart, but don't get discouraged, you will get the hang of it..

Thoroughly mix 1 cup of baking soda and 1/2 cup of the citric acid. Make sure it is mixed well and there are no lumps. Add your fragrance and color. Fragrances are your preference, but I enjoy essential oils like lavender or peppermint. If you are using food coloring, make sure to only use a few drops. Lightly spray on the witch hazel while mixing. You want to spray enough on so the mixture just starts to stick together. Too much and the mixture will start bubbling and reacting. Just after the mixture starts to stick together, press into the molds. Make sure you squeeze the mold halves together hard. Wait a few minutes, then tap them out of the molds. Let sit a few hours or overnight, and then they'll be ready for wrapping.

I have also seen some recipes that include epsom salt in the dry mixture, and almond oil to help keep the ball together. Some recipes also include cornstarch, which I personally would advise against, as it has been mentioned that it might irritate a rash or make it worse. There are conflicting views on this, but I leave it out to be safe.

I used clear colored wrapping and raffia ribbon for the presentation of the gift.

They make a great addition to other homemade bath products in a gift basket.

What You Need

1 egg 1/3 cup melted butter or margarine 1/3 cup sugar 2 cups Bisquick mix 1 container whipped topping 8 ounce 1 package cream cheese 8 ounce 2/3 cup sugar 1 ½ teaspoon vanilla flavoring 1 cans mandarin oranges 1 can cut up pineapple rings 2 or 3 sliced kiwi fruit 1 pint sliced strawberries 1 cup orange juice 1 teaspoon lemon juice 2 Tablespoons cornstarch ½ cup sugar

How to Make It

Prepare pizza pan by lightly applying cooking spray and then set aside until needed.

Preheat oven to 350 degrees Fahrenheit.

Using a medium to large size mixing bowl, you will add the egg and beat, then add the melted butter while mixing. Add the sugar and Bisquick mix and combine thoroughly.

Press this mixture onto the prepared pizza pan and place in the oven to bake for about 10 to 12 minutes, but do not allow to burn. Once done, remove from oven and allow the crust to completely cool.

Using a medium mixing bowl and electric mixer, you will add the whipped topping, cream cheese, sugar, and vanilla and beat until well blended to prepare the pizza filling.

Spread the filling mixture over the cooled pizza crust evenly, and then cover with mandarin oranges, pineapple chunks, kiwi, and strawberry slices by arranging the fruit in a decorative swirl pattern.

Using a small saucepan on a medium heat, you will add the orange juice, lemon juice, cornstarch, and sugar. Mix them together well by stirring and cooking for about 4 to 5 minutes. Remove from heat and drizzle this delicious topping over the fruit tray party dessert pizza you are preparing.

You can serve this pizza as it is or you can place it in the refrigerator overnight or for at least 4 or 5 hours before serving.

I love everything coffee: hot coffee, iced coffee, coffee ice cream, coffee-flavored candy. The only thing I do not like about coffee is how much they are charging now-a-days for a cup! You can easily pay up to .00 for a specialty coffee. I know. I have done it and will likely do it again and again and again. Why? Because I LOVE coffee.

Luckily I work from home and make my own coffee 95% of the time. I am very picky about the coffee that I buy. I tend to stick with Starbucks and Dunkin Donuts-brand coffee when they go on sale and I have coupons. I am so glad that I do not work out of the home because I know that I would be among those that go through the drive-through for my cup of coffee just about every day. I just know it!

I just ran across a couple of facts regarding those who do go through the drive-through often:

1. People who buy coffee primarily at drive through windows on their way to work will spend as much as 45 hours a year waiting in line.

2. The average person who buys coffee outside the office to consume at work will spend the equivalent value of a round trip plane ticket to Florida every year.

WOW! Can you believe that? Thank God I make my coffee at home! I can drink coffee all day every day. However, when it is 100 degrees outside, a HOT cup of coffee just does not sound appealing to me; therefore, I decided to look up a few Summer coffee recipes since going to Starbucks everyday is definitely not an option for me. I do not have the time nor the money to spend going through a drive-through to get a good cup of coffee! Besides, I want to be in control of what I put in my coffee since I am trying to cut back on my calories. Have you looked up the calories contained in some of those drinks?

Note: You can purchase all of the specialty syrups used in Starbucks drinks at any Starbucks store! You can also go online and order DaVinci Gourmet Syrup at only .99 a bottle. DaVinci syrups have no calories and they are sugar free! I have searched several stores on several occasions for DaVinci syrup, but have not had any luck. Your luck might be better than mine, but, if not, you can go online. Some of the following are copycat recipes from one of your favorite coffee stores!

Iced Coffee:

1. Start with a rich flavorful coffee.

2. You can make your coffee in advance or let it cool, although I find that just filling my glass up with ice and pouring the hot coffee over it works just fine!

3. Add cream and sugar or a sugar substitute. You can also try adding a little syrup. We even tried sugar free pancake syrup because we ran out of sweetener and it tasted great!

Coffee Popsicles:

Mix your coffee how you like it and just freeze. You can use a Popsicle mold or ice cube tray. You can even put these ice cubes in your iced coffee!

Caramel Macchiato:

Ingredients:

2 tablespoons Vanilla Syrup
1/2 cup fresh brewed Espresso (You will have to have an Expresso machine.)
8 ounces steamed milk (You actually do not need an Expresso machine to make steamed milk. See how to steam milk here!)
3 to 4 tablespoons Caramel Sauce or Caramel Syrup

Instructions
Add vanilla syrup to 16 oz glass.
Add steamed milk and caramel sauce/syrup and stir well.

Coffee Frappe:
Ingredients:
18 -22 Ice cubes, crushed
7 ounces Double-strength coffee, chilled
2 tablespoons granulated sugar
2 tablespoons flavored syrup of choice (vanilla, hazelnut, raspberry or other)

Whipped cream

Java Chip Frappuccino:
Ingredients:
4 tablespoon chocolate syrup
4 tablespoon chocolate chips (you can substitute sugar free chocolate cut up into pieces)
4 cups double-strength freshly brewed dark roast coffee
Chopped or crushed ice
Whipped cream (optional)
Chocolate syrup (for drizzle, optional)

Fill blender half full with chopped or crushed ice. Add all ingredients (except whipped cream) and blend until thick and still icy. Pour into 4 tall glasses, top with whipping cream and drizzle chocolate over the whipped cream.

Mocha Frappe:
Instructions:
Fill blender half full with chopped or crushed ice. Add all ingredients (except whipped cream) and blend until thick and still icy. Pour into 4 tall glasses, top with whipping cream and drizzle chocolate over the whipped cream.

Instructions
Place the ice, coffee, sugar and syrup in a blender. Blend until the frappe is smooth. Pour into a large, tall glass. Garnish with a dollop of whipped cream.

Java Float:
Ingredients:
4 tablespoon chocolate syrup
1 tablespoon chocolate chips (substitute sugar free chocolate as above)
2 cups club soda or sparkling water, chilled
4 scoops coffee ice cream (look for sugar free or low carb ice cream)

Instructions

In each of 2 tall glasses, stir together 2 Tbsp. of chocolate syrup and 1 cup club soda. Place 2 scoops of ice cream in each glass and serve immediately.
